Our chefs have upgraded the quality of everything on our lunch menu – from the bread to the meat and everything in-between. All sandwich meats are now roasted in-house for freshness and flavor. We’ve kept your favorites but added upgrades, and in keeping with the theme of our cheese shop, your favorite cheeses continue to be featured throughout the menu. We’ve also added a house specialty dessert – Crème Brûlée! Come in and experience the new lunch items and let us know what you think! - Saturday Tasting Room:Every Saturday Starting July 9!

Professional Chef Program
Are you serious about embarking on a culinary career but desire and alternative to the packed classrooms? We have a program designed for you! Under the direction of Executive Chef Instructor Laurent Brazier, we have developed an intensive professional chef program that covers all the information, techniques, methods and practical knowledge that you need to start a new career. This hands-on, fast paced program is designed for those seeking a change in career – the program is not accredited and does not cover academics – its purpose is to get you the knowledge and practical experience necessary to begin a successful career in the food service industry.
Professional Chef Program Highlights:
Small class size – we accept only 8 students per program
An environment to learn – our compact yet fully equipped commercial kitchen mirrors the conditions found in most restaurants
Kitchen staff – we employ a full time dishwasher to allow the students to focus as much time as possible on learning
Experience – our lead instructor, Chef Laurent Brazier, has spent 23 years in the industry. Classically trained in Paris, Chef Brazier has cooked in 2- and 3-star Michelin restaurants in Europe, in large hotels worldwide, and has operated his own critically acclaimed restaurant in Laguna Beach. In 2003 he turned his attention to teaching, and has since shared his considerable knowledge with, and graduated more than 80 students from our program, many of whom are currently working in fine dining restaurants, catering and professional chef businesses or as culinary instructors
Guest instructors – a key part of the program is gaining experience working under different chefs; our guest instructors bring their own unique expertise to the classroom and provide a more varied learning experience
Reinforcement – monthly exams, notebook review, restaurant project and final performance exams are supplemented with weekly evaluation of attitude and teamwork
Career development & job placement support – full time support staff remain connected to the industry, and assist with the identification of job opportunities
Tools, books and uniforms – all included in the price of the program
